Genmaicha – Hand-Roasted Brown Rice and Green Tea

This genmaicha is a comforting and balanced Japanese tea, crafted with care from hand-selected ingredients. It combines green tea leaves with 100% home-grown glutinous brown rice, creating a cup that feels both warming and refreshing.

Unlike mass-produced genmaicha, where rice is often sourced externally and roasted mechanically, the rice used here is grown and prepared entirely on the farm. Each batch is patiently hand-roasted, allowing precise control over aroma, color, and texture.

The result is a tea with a gentle roasted fragrance, subtle natural sweetness, and a clean, light finish.

Hand-Roasted Rice, Thoughtful Balance

Genmaicha is traditionally valued in Japan for its approachability and everyday drinkability. The careful roasting of glutinous brown rice brings warmth and depth, while the green tea contributes freshness and clarity.

Here, the roasting is done slowly and by hand, avoiding bitterness or burnt notes. This creates a harmonious balance where neither the rice nor the tea dominates — instead, they complement each other naturally.

Pure Cultivation, Honest Ingredients

Both the tea leaves and the brown rice are grown following Morii Farm’s strict cultivation principles. The fields are managed without reliance on modern chemical inputs, preserving the integrity of the land and the crops.

The tea is grown using a philosophy of zero pesticides, zero chemical fertilizers, zero herbicides, and zero livestock compost.

This level of care is rare today, especially for genmaicha, which is often treated as a secondary tea. Here, it is approached with the same seriousness and respect as premium green teas.

Brewing Suggestions (Flexible and Forgiving)

Genmaicha is an easy and adaptable tea. The guidelines below are simply our suggested starting point — feel free to adjust based on your taste, water, and mood.

Hot brew
Water temperature: 80–90°C
Tea amount: 2–3 g per cup (200 ml)
Steeping time: 30–60 seconds

The same leaves can be enjoyed for 2–3 infusions. Slightly cooler water highlights freshness, while warmer water brings out the roasted character.

Cold brew
Use 5 g per 1 liter of cold water
Steep in the refrigerator for 6–8 hours
Strain and enjoy chilled

Cold brewing emphasizes the tea’s gentle sweetness and soft roasted notes, with very low bitterness.

A note on water
For best results, use filtered or low-mineral water. Hard water, common in many parts of Europe, can mute aromas and add heaviness. If your water is mineral-rich, reducing the tea amount slightly or lowering the temperature can help maintain clarity.
